Curried Coconut Cashew Popcorn

I was flipping through the channels earlier this week and caught a segment of MasterChef Canada winner Chef Mary Berg cooking up some DIY Oscar party popcorn recipes and stopped in my tracks when I heard the word curry

The recipe that caught my attention was a Curried Cashew Popcorn which is a clever tropical-ish sweet and salty popcorn recipe that had me saying, 'I HAVE to make this!' And so I did.

This recipe is a little different than our Indian Spiced Popcorn recipe which has a bit more heat and no sweetness.

So easy to make, this is a popcorn flavour for the one who likes a depth of flavour, nuttiness and texture from the cashews and the salty-sweet combo. Best of all, there's a load of health beneficial spices especially from the turmeric found in the curry powder! Isn't that a bonus?!

I slightly changed the recipe as I added some of Arvinda's Garam Masala for some extra aromatic spices, so if that's available in your pantry you can add that in. I also added more Arvinda's Curry Powder to amp up the flavour. And lastly, I added a bit of coconut for some extra texture and flavour and used coconut oil as my choice of fat.

CURRIED COCONUT CASHEW POPCORN

Recipe adapted from (Marilyn Dennis Show): Chef Mary Berg

Method of Preparation:

1) In a small saucepan, melt coconut oil on medium-low heat. Stir in honey until smooth.

2) Place popcorn in a large bowl. Pour over coconut oil and honey mixture. Toss well.

3) Sprinkle in ARVINDA'S CURRY POWDER, sea salt, ARVINDA'S GARAM MASALA and cashews. Toss well and garnish with coconut. Enjoy!

Ingredients:
1/3 CUP popcorn kernals, popped
2 TBSP. coconut oil
1 TBSP. honey
1 TBSP. ARVINDA'S CURRY POWDER
1/2 TSP. sea salt
1/4 TSP. ARVINDA'S GARAM MASALA (optional)
1/2 CUP cashew halves, gently toasted
1/8 CUP unsweetened shredded coconut, to garnish

A quick holiday treat: HOLIDAY CHAI SPICE LADOOS (SNOWBALLS)

Years ago, my Holiday Chai Spice Ladoos (snowballs) recipe was featured in the article, “How to Create a Signature Party” in the Toronto Star.

This recipe is easy as it requires no baking, so it's a quick sweet treat to make! These will look beautiful on any Christmas cookie plate as they look like 'snowballs' thanks to the coconut.

HOLIDAY CHAI SPICE LADOOS (SNOWBALLS)

Method of Preparation:

1) In small bowl, soak raisins in rum at least 15 minutes. Drained just before using.

2) In medium bowl, add peanut butter; stir well. If consistency is stiff, warm slightly in microwave. Mix in 3/4 cup coconut, cranberries, almonds, peel, honey, ginger, ARVINDA'S CHAI MASALA and raisins. Refrigerate 15 minutes.

3) Using heaping teaspoons, roll into balls.

4) Place remaining 1/2 cup coconut in shallow bowl. Roll balls in coconut, shaking off excess. Store in sealed container in refrigerator.

Makes about 45 pieces.

Ingredients:
1/4 CUP raisins (such as Thompson or sultana)
2 TBSP. rum
3/4 CUP crunchy peanut butter
3/4 CUP dried, unsweetened coconut + 1/2 CUP for dusting
1/2 CUP dried cranberries
1/2 CUP raw, unblanched almonds, chopped
1/4 CUP mixed peel
1/4 CUP honey
1 TBSP. ARVINDA'S CHAI MASALA
 

Tropical Winter Curry: Channa Masala with Coconut & Banana

Switch up your next Channa Masala curry with a garnish of dried coconut and sliced bananas on top for a sweet tropical bite! 

It's surprisingly pleasing with the sweetness of the banana and warming curry flavours. Hint: This could be a good way to get your kids to try Channa Masala.

Indian Spiced Macarons!

After a couple of failed attempts, I eventually found success making macarons at home. I wanted to experiment with a couple of Indian flavours including: 

  • Chai Spiced Coconut Macaron
  • Garam Masala Chocolate Macaron

The flavour combinations were delightful and unlike any that I've seen in pastry shops around town. Below, are the recipes for two different filling I tried.

CHAI SPICED COCONUT CREAM CHEESE MACARON FILLING

Method of Preparation:

1) In a bowl, mix ingredients together.

Ingredients:
1/8 CUP cream cheese, softened
1/3 CUP icing sugar, sifted
1 TSP. ARVINDA'S CHAI MASALA
1 TSP. organic coconut essence


GARAM MASALA CHOCOLATE MACARON FILLING

Method of Preparation:

1) Mix butter with sugar. Stir in remaining ingredients.

Ingredients:
2 TBSP. butter, softened
½ CUP icing sugar, sifted
4 squares, semi-sweet chocolate, melted
1 TBSP. cocoa
1 TSP. ARVINDA'S GARAM MASALA
½ TSP. vanilla
