Curried Egg Salad Sandwich

This one is for all the Indian spice lovers out there! At Arvinda's we believe an egg salad sandwich is part-and-parcel with a curry powder seasoning, which lends the dressing mixture a lovely turmeric hue and fragrant Indian flavours. It's classic and simple, and delicately spiced yet bold with intensity from the red onions. Once you taste this, you may never go back!

We also like adding green chilies into the mix as it's wonderfully surprising with a bite of chili heat! Or you can choose Arvinda's Madras Curry Powder for a hotter option (here's a sneak peek at our newest masala...coming soon!).

Now cooking your hard-boiled eggs just right is important for the texture of your egg salad. You want to avoid overcooking the yolks so they don't have that crumbly texture but on the other hand, they shouldn't be too soft cooked either. For best results, follow these simple steps to getting the hard-boiled eggs just right.

CURRIED EGG SALAD SANDWICH

Go mild, or bold! Spice up your egg salad sandwich with a dash of Arvinda's Curry Powder or Arvinda's Madras Curry Powder. Choose a hearty grainy bread for serving and dress up your sandwich with sprouts or leafy greens of your choice.

Ingredients:
4 hard-boiled eggs

EGG SALAD DRESSING MIXTURE:
1/2 CUP mayonnaise
2 TBSP. finely chopped red onion
2 TBSP. finely chopped cilantro
1 1/2 TSP. ARVINDA'S CURRY POWDER or ARVINDA'S MADRAS CURRY POWDER
1 TSP. sea salt, or to taste
1 to 3 green chilies, finely chopped

Directions:
1) Finely chopped the hard-boiled eggs and set aside.
2) In a medium-sized bowl, mix together the Egg Salad Dressing Mixture. Fold in the eggs.
3) Serve on your favourite grainy brain and garnish with sprouts or greens if desired.
